The Simple Ingredients For The Easy Recipe
Here are all of the basic low-carb diet ingredients that you’ll need for the simple recipe:
Large Eggs – include 2-3 eggs per person, depending on how many eggs you usually like in your soft eggs meals.
Cream Cheese – the luxuriously creamy ingredient is naturally low in carbs and high in healthy g fat and g protein. You can swap some or all of the cream cheese for sour cream or heavy cream, depending on what you have in your kitchen, and still achieve eggs with a creamy texture.
Seasoning – sprinkle eggs with salt, black pepper or your seasoning of choice such as garlic powder, onion powder or even Italian seasoning.
Spinach – to make the dish into a whole, balance meal and balance the richness of the other ingredients, I’ve added in a handful of nutritious spinach in the last minute of cooking. You can swap for a little chopped green onion or chives if you’d prefer.
You could also add in more low carb vegetables such as chopped cherry tomatoes, red pepper, mushrooms or avocado, cooking the vegetables if you’d prefer before you cook the eggs.
More Cheese – in addition to the cream cheese in the eggs, you can crumble a little bit of feta cheese or grate over parmesan cheese, cheddar cheese or Monterey Jack for extra cheesy eggs.
Scrambled Eggs With Cream Cheese Recipe
- 2-3 Large Eggs
- 1/2 to 1 Tablespoon Cream Cheese
- Handful of Spinach, washed
- Salt, Black Pepper & Seasoning, to taste
- Olive Oil, Coconut Oil or Butter, for frying
- Heat a large skillet or nonstick pan on the stove top over medium heat to high heat and melt butter or oil.
- Crack the eggs into a medium bowl, add in the 1/2 to 1 Tbsp cream cheese, salt, black pepper and any other seasoning you’d like.
- Whisk eggs and cream cheese mixture together until smooth and creamy.
- When the nonstick skillet is hot enough, pour in the whisked egg mixture and quickly move the eggs around the bottom of the pan to scramble.
- Once almost done, add in the washed spinach and cook until the eggs are done to your liking and the spinach has wilted.
- Serve cream cheese scrambled eggs immediately as is or topped with more seasoning and enjoy.
