Low Carb Pumpkin Mash Recipe
This dish is the result of a happy accident. I had wanted to make pumpkin soup, but only had a little in the fridge, along with heaps of cauliflower.
So, I cooked them up and then decided to drain the cooked pumpkin and cauliflower and try mashing them together instead of having as a soup.
The result? A creamy, luxurious mash that’s irresistible!
As pumpkin is quite high in carbs, but still allowable on the keto diet, a little goes a long way with this dish.
Volumes haven’t been specified because it really depends on how pumpkin heavy you want your mash and how creamy you want it.
You can also boil up a couple of garlic cloves for a garlic infused mashed cauliflower and pumpkin.
To make the keto mashed pumpkin, ou simply cook the cauliflower and pumpkin together until soft and mashable. Then you mash it all together with cream and butter. Perfection!

- Pumpkin
- Cauliflower
- Salt
- Cream
- Butter
- Chop the pumpkin and cauliflower into uniform sized pieces.
- Move the pumpkin and cauliflower into a saucepan and cover with water and a generous pinch of salt.
- Place the saucepan on the stove top on a medium to high heat.
- Bring up the boil and simmer until the pumpkin and cauliflower are soft and easily mashable.
- Drain and pour over some cream and add some butter. Depending how creamy you want it will determine how much you add.
- Mash with a potato masher until smooth and creamy.
