This keto zucchini casserole recipe makes a quick and easy side dish or main meal that’s loaded with creamy, cheesy goodness and the whole family will enjoy.
There are also plenty of ways to adapt the great recipe to your own tastes, dietary requirements and what’s easy to find at a grocery store near you.
I bought all of the ingredients at affordable ALDI, making it a brilliant budget friendly meal too.
The Simple Ingredients For The Easy Recipe
Here are the 4 basic ingredients you’ll need for the easy zucchini casserole recipe, plus lots of ideas for variations:
Fresh Zucchini – I’ve included 2 fresh zucchini that are sliced up to create the base for the dish, although you can use as much zucchini as you’d like, depending on how many people you are feeding and whether the dish will be a side dish or main meal.
You can feel free to swap for any other low-carb vegetables, or include a mix of vegetables such as broccoli, cauliflower, mushrooms or cabbage. You could also make it meaty by adding in sauteed ground beef or chicken breast.
Sour Cream – a great way to add a tangy creaminess to the creamy sauce of the main dish. You could swap for cream cheese instead if you’d prefer, which is another creamy ingredient that’s low in g net carbs.
Heavy Cream – to add luxurious creaminess to the keto diet friendly meal, heavy cream or heavy whipping cream is the perfect inclusion in the creamy cheese sauce.
Grated Cheese – plenty of shredded cheese is mixed through the casserole as well as topped before going into the oven for a golden brown, super cheesy topping that the entire family will enjoy, including picky eaters.
You can include any type of cheese you’d like such as sharp cheddar cheese, mozzarella cheese, Parmesan cheese, Pepper Jack or Gruyere cheese.
Seasoning – I’ve left the recipe without the mention of seasoning because we adore it as it is with the flavors of the sour cream, heavy cream and cheese combining together with the zucchini.
You can feel free to add in your choice of seasoning though from sea salt, black pepper, Italian seasoning, garlic powder or onion powder.
Keto Zucchini Casserole Recipe
- 2 Fresh Zucchini
- 1/3 to 1/2 Cup Sour Cream
- 1/3 to 1/2 Cup Heavy Cream
- 2/3 to 1 Cup Grated Cheese
- Preheat the oven to 180C/350F and get out an over proof baking dish.
- Wash, trim and slice the zucchini into bite sized pieces, them move the zucchini slices to the baking dish.
- Add the sour cream and heavy cream, toss well to combine with the sliced zucchinis, then add in half of the grated cheese, mixing through to incorporate.
- Top with the remaining cheese, or more, to cover, then place into the preheated oven for 25 to 30 minutes or until golden brown on top and cooked through.
- Serve the delicious dish immediately, storing any cooled to room temperature leftovers in an airtight container to enjoy within a day.
