- As a keto cake filling/frosting

Keto Lemon Curd Recipe
- 3 Eggs
- 1/4-1/2 Cup Stevia
- 2 Lemons
- 50g/1.76oz Unsalted Butter
- Crack the eggs into a small saucepan.
- Add the stevia.
- Whisk the eggs and sugar together, until fully combined.
- Add grated lemon zest and squeeze out the juice of the lemons over a sieve to catch any pips, then whisk the lemon zest and juice through.
- Chop the butter into small cubes and add into curd mixture.
- Move the saucepan to the stove top and place it over medium heat.
- While cooking, whisk continuously until the butter has melted and the curd has thickened.
- You can check that the curd is done by placing a spoon into the curd, removing it and running your finger along the back of the spoon. The curd should hold it’s place once it’s properly thickened.
- Remove the curd from the stove top and allow to cool completely.
- Once the curd has cooled completely, move to a mason jar or serving dish, then store in the fridge and enjoy.
