Keto Broccoli Quiche

Ensure the dish that you cook your quiche in is very well greased so that it’s easy to remove and doesn’t get stuck.
You can keep the quiche simple with just broccoli and leek (or onion), or add in other vegetables such as mushrooms, cauliflower, garlic or add in chopped bacon, ham, tuna or chicken for a protein rich quiche.
Keto Broccoli Quiche Recipe
- 1 Leek or Onion
- 1 Head of Broccoli
- Salt & Pepper, to taste (plus any other seasoning you like)
- 4-6 eggs
- 1/4 to 1/2 Cup of Cream
- 1/2 Cup Grated Cheese
- Butter or Coconut Oil, for frying
- Preheat the oven to 350F/180C and well grease an oven safe pie or quiche dish.
- Heat butter or coconut oil in a frying pan.
- Meanwhile, chop the leek or onion and broccoli into bite sized pieces.
- When the pan is hot, add the leek or onion and cook until starting to soften.
- Add the broccoli, salt, pepper and any other seasoning to taste.
- Cook, adding more butter when needed, until starting to soften.
- Then, move the vegetables to the prepared quiche dish.
- Whisk the eggs, cream and half the cheese, together in a bowl.
- Pour the whisked eggs over the vegetables.
- Top with the other half of the cheese.
- Place into the preheated for 20 to 30 minutes, or until golden to your liking.
- Slice into 8 pieces and serve.
