Keto Breakfast Cookies Recipe
These keto breakfast cookies are easy to make and are the perfect prep ahead treat to enjoy for breakfast with a cup of coffee. (Or bulletproof hot chocolate!)
The keto breakfast cookie recipe is a great way to enjoy a super quick ketogenic diet breakfast, especially on busy mornings.
To make the cookies, simply combine together almonds and coconut in a bowl. It’s important to prep this to have ready for once you’ve melted the other healthy ingredients together.
You can swap the flaked almonds for any keto diet friendly nut or seed you like including almond meal, chopped walnuts or cashew nuts, sunflower seeds, pumpkin seeds, sesame seeds, hemp seeds or hemp hearts.
Then, melt together the peanut butter, stevia, cocoa powder and butter. You can feel free to swap the peanut butter for almond butter or another nut or seed butter, stevia for your sweetener of choice and butter for coconut oil if you’d prefer for the cookies to be dairy free.
To make the cookie dough, pour the peanut butter mixture over the nut mixture and stir until well combined.
You can make double chocolate cookies by folding keto friendly dark chocolate chips through the rest of the ingredients.
Then, it’s just a matter of dropping a tablespoon per cookie onto a greased cookie tray and place into the fridge overnight to harden. You can then simply grab a couple of low carb breakfast cookies to enjoy for an easy breakfast the next morning.
The cookies are loaded with healthy fats from the nuts, nut butter and butter or coconut oil, while being low in grams of net carbs, making them the perfect healthy breakfast, keto dessert or after dinner treat.

- 1 Cup Flaked Almonds
- 1/2 Cup Shredded Coconut or Coconut Flakes
- 1/2 Cup Peanut Butter
- 1/3 to 1/2 Cup Stevia
- 1/4 Cup Cocoa Powder
- 50g/1.76 ounces Unsalted Butter or 1/4 Cup Coconut Oil For Dairy Free
- Line a baking tray with well greased baking parchment paper.
- In a large bowl, place flaked almonds and coconut and mix well.
- In a small saucepan, combine together the peanut butter, stevia, cocoa powder and butter or coconut oil.
- Place the saucepan over medium heat and stir continuously until the butter has melted and mixture is smooth and creamy.
- Pour the chocolate peanut butter mixture over the almond mixture in the bowl.
- Stir until you have a cookie dough.
- Get out the prepared baking sheet and drop a tablespoon per cookie.
- Once the baking tray is filled, move it to the fridge and allow the no bake cookies to harden in the fridge for a few hours.
- Store in the fridge in an airtight container and enjoy.
