These keto almond flour pancakes make and easy breakfast, snack or indulgent low carb sweet treat.
The ingredients are simply whisked together and then cooked until done.
As you can see, these pancakes are beautifully light and fluffy when you cut into them. You won’t believe they are gluten free, low carb and keto diet friendly too.
Low Carb Pancake Toppings
You can top your pancakes with your low carb toppings of choice. Here are some ideas:
- Berries
- Nuts
- Shredded Coconut
- Butter
- Whipped Cream
- Low Carb Ice Cream (like Halo Top)
- Chocolate Mousse
- Sugar Free Maple Syrup (like this one)
Fluffy Almond Flour Pancakes Recipe
- 3 Eggs
- ½ teaspoon Vanilla
- 1/2 Cup Almond Milk
- 1 & 1/3 Cups Almond Flour/Ground Almonds
- In a large bowl, whisk the eggs until smooth.
- Whisk in the vanilla and almond milk.
- Add the almond flour and whisk to form a pancake batter.
- Heat coconut oil or butter in a large frying pan and, when hot, drop a tablespoon of batter per pancake into the frying pan.
- Cook until the pancake has set on one side and then flip and cook until cooked through on both sides.
- Move to a plate and top with your toppings of choice.
