Low Carb Egg and Sausage Scramble Recipe
There are so many low carb, keto diet friendly ingredients you can mix and match for breakfast, that I just love coming up with different breakfast scramble variations.
You can use as little or as much of each ingredient as you want. Onions, garlic and tomatoes are on the higher end of the carb spectrum, so it really depends on your tastes and how many carbs you want to allocate to your meal.
I’ve been experimenting with intermittent fasting lately and having 2 meals a day. So, I tend to allocate a LOT of carbs to breakfast and a smaller amount to lunch – hence the bounty of tomatoes included in this scramble. (Note, that I shared this with my Husband – it wasn’t ALL for me!)
In this instance I used leftover, cooked, low carb sausages that I chopped into bite sized pieces. Feel free to substitute in your meat of choice, or leave it out if you’re after a vegetarian breakfast.
Low Carb Egg and Sausage Scramble Recipe
- Chopped Onion
- Chopped Garlic
- Chopped Tomatoes
- Chopped Sausages
- 2-3 Eggs per person
- 1-2 Tablespoons Cream per person
- Butter or Coconut Oil, For Frying
- Heat butter or coconut oil in a large frying pan.
- When hot, add the onion and garlic and cook until starting to soften.
- Add the tomatoes and sausages and cook until almost done to your liking, adding more butter or coconut oil as you think it needs it.
- Whisk the eggs and cream together until smooth and pour over the frying pan contents.
- Cook briefly to scramble until cooked to your liking, serve and enjoy.
