Easy Keto Granola Recipe
This easy chocolate granola recipe is nutty, chocolatey and makes an indulgent breakfast treat.
A while back I shared another simple low carb granola recipe which has been really popular on the blog. So, I set about to create a chocolate version, complete with crunchy clusters.
Low Carb Granola Ingredients
Here are the ingredients that you’ll need for this recipe, most of them are easy to find at Amazon or even budget friendly ALDI.
Seeds – I find that bulking out the granola with sunflower seeds helps keep the granola budget friendly.
Nuts – almonds and cashews are included in this particular recipe. You can feel free to include any chopped nuts you like, instead.
Coconut – to add in sweetness, texture and coconut flavor.
Stevia – or you sweetener of choice to sweeten the granola without adding sugars or carbs.
Chocolate – I’ve included both cocoa powder and cacao nibs for an intense chocolate hit through the granola.
Coconut Oil – to help bind the granola together and add healthy fats.
Easy Keto Granola Recipe
- 1 Cup Sunflower Seeds
- 1/4 Cup Chopped Cashews
- 1/4 Cup Chopped or Sliced Almonds
- 2 Tablespoons Stevia
- 2 Tablespoons Shredded Coconut
- 1 Tablespoon Cacao Nibs
- 2 Tablespoons Cocoa Powder
- 1/3 Cup Coconut Oil
- Preheat the oven to 250F/100C and line a baking tray with parchment paper and grease it well.
- In a large bowl, combine together all of the ingredients except the coconut oil and stir until well mixed.
- In a small saucepan melt the coconut oil and then pour it over the granola mixture.
- Pour the granola mixture onto the prepared baking tray and flatten it down so that it’s all in a single layer.
- Move the granola to the preheated oven and cook for 20 minutes.
- Remove from the oven, toss the granola and return to the oven for a further 20 minutes and toss the granola once again.
- Cook for a final 20 minutes or until golden and cooked to your liking.
- Once done, remove the granola from the oven and allow to cool . The longer you leave the granola, the more clusters will form.
- When you’re happy the granola is cool enough, break it into clusters.
- Once completely cooled, store in an airtight container and enjoy with low carb milk or yogurt.
