These great recipe couldn’t be simpler to make. Start by popping the 250g/8.8oz of mixed nuts into a bowl, you may want to break up the larger nuts into smaller pieces if you’d like.
Then, see to melting the chocolate and coconut oil together. You can do this in the microwave in 30 second increments, mixing in between until melted.
Or, using the double boiler method whereby you bring a saucepan of water up to the boil ,then carefully place a heatproof bowl with the chocolate and coconut oil in it and stir regularly until melted.
Add the mixed nuts to the melted chocolate and mix until well combined. Allow to cool slightly. Meanwhile, line a sheet pan or a couple of large baking sheets with well greased baking paper.
Drop a tablespoon per nut cluster onto the prepared sheet, then move to the fridge for a one to two hours to set. If you find that they are too runny and you end up with one big tray of clusters, then you can simply break them into chocolate bark once set.
Once set, remove from the fridge and enjoy as a little treat with a mug of tea, coffee or hot chocolate. Store in a covered container, air tight containers or move into decorative boxes to take to a holiday party.
