No Churn Keto Ice Cream Recipe
To make no churn keto ice cream, you really only need 3 ingredients – frozen berries, cream and stevia (or your sweetener of choice). That’s it!
Now, the actual volumes will depend on how many carbs you want to allocate to your ice cream and how many mouths you’ll be feeding.
To start, get out a blender or, if you have it, a mini food processor which is perfect for making a small amount of ice cream as need be.
How Many Carbs In Fruit?
Measure out how many frozen berries you want to use. There are about 2-3 carbs in a quarter of a cup of berries, more or less depending on the variety that you use. (This page has helpful information about different berry varieties and their carb content.)
Next, you add the cream and stevia to taste, depending on the sweetness of your fruit and how sweet you want your ice cream to be. You’ll need about half as much cream as there are berries. So, if you’ve added a quarter of a cup of berries then you’ll need 1/8 of a cup of cream.
I find it easiest to add a couple of tablespoons of cream, blend and then add more until I have the perfect ice cream consistency that I’m after.
The below recipe makes enough for one small (very small) serving. Double, triple or more to prepare more servings.

- Place all of the ingredients into a mini food processor.
- Blend, taste if it’s sweet enough, adjust sweetness to taste and then enjoy.
As you can tell, this ice cream is incredibly easy to make and once you’ve blended up your first bowl full, you’ll be making this recipe over and over and over again.
You could of course top your no churn keto ice cream with a generous swirl of whipped cream to increase the fat content. Making it even more of a decadent treat.
