Eggnog is great all year around and this recipe is so easy and the finished sweet treat tastes almost like a creamy custard.
It’s really just a matter of whisking your ingredients together and gently heating over the lowest heat to cook your eggs, without scrambling them.
Some enjoy eggnog with raw eggs (and even rum included) – I prefer to cook mine and have it without rum. But – feel free to be inspired by this recipe and then adapt it to your tastes.
In my pre-keto days, I loved using maple syrup as a sweetener, especially in eggnog. So, you can imagine my delight when I got my hands on Maple Flavor, which brings the deliciousness of maple syrup without the carbs.
You can enjoy your low carb eggnog warm in a mug, or allow to cool completely and enjoy chilled in a glass and topped with whipped cream.
Sugar Free Keto Eggnog Recipe
- 3/4 Cup Almond Milk
- 1/4 Cup Heavy/Double/Thickened Cream
- 1/2 to 1 teaspoon Stevia (or your sweetener of choice)
- 1/2 teaspoon Maple Flavor
- 2 Eggs
- In a small saucepan, whisk together all of the ingredients until smooth.
- Place on the stove top over the lowest heat.
- Cook, whisking continuously, until the eggs have just cooked, the eggnog has thickened and it coats the back of a spoon.
- Enjoy warm or cool, then place into the fridge to chill.
- Either way, you could enjoy your eggnog topped with plenty of whipped cream.
