Keto Egg Salad with Asparagus
I stumbled on this recipe while looking through an old cookbook of my Mom’s. Apparently my Aunty used to make this in the late 70’s and it was the height of sophistication. Asparagus was rare and making a salad with it was very fancy!
Luckily for us, it’s easy to get hold of asparagus these days and I was thrilled to give the recipe a try. The original recipe calls for mayonaise, but I much prefer using sour cream in place of mayo in recipes. Feel free to use either sour cream or mayo – or even a mixture of both.
How To Hard Boil Eggs
There are many, many ways to hard boiled eggs. Here’s mine:
- Place eggs into a small saucepan and cover with water.
- Bring up to the boil.
- Simmer for 10 minutes.
- Remove from the stove and allow to cool completely in the water.
- When cool, peel and enjoy!
Keto Egg Salad With Asparagus Recipe
- 6 Hard Boiled Eggs
- 1 Can or Bottle of Asparagus Spears
- 1/2 Cup Sour Cream
- Salt & Pepper, to taste
- Peel and chop the hard boiled eggs and place them into a salad bowl.
- Drain and chop the asparagus and add them to the salad bowl.
- Pour over the sour cream and stir gently to combine.
- Season with salt and pepper to taste.
- Refrigerate for a few hours and enjoy.

- 1 Can or Bottle of Asparagus Spears
- 1/2 Cup Sour Cream
