This keto corned beef hash is the perfect way to enjoy leftover corned beef in a meal that makes a protein rich breakfast or breakfast for dinner.
You can prepare this any time of year, whether that’s around St. Patrick’s Day or simply to enjoy a tasty, hearty meal that will help you achieve your own personal health and weight loss goals.
Low Carb Diet Friendly Ingredients
Here are the low-carb diet friendly ingredients that are included in the keto corn beef hash:
Corned Beef – I used leftover corned beef that I shared the easy recipe for recently, you can also swap and use beef brisket, roast beef or any other leftover already cooked meat you’d like.
Cabbage – I’ve used sliced cabbage as the potato substitute that you usually find in a breakfast hash. The cabbage that I used in this dish was already cooked, along with the corned beef, the day before. If you’re using fresh cabbage, then be sure to give it a head start by frying it for about 5-10 minutes, until softened and ready to go into your breakfast hash.
Eggs – adding in a fried egg or two adds in additional protein and flavor to the corned beef recipe.
More Keto Diet Ingredient Ideas – there are plenty of extra ingredients and good substitutes that you can add to the corned beef mixture to satisfy your taste buds. Instead of simple salt and pepper add in your seasoning of choice, such as chilli flakes or garlic powder, or herbs like fresh chives.
You can also feel free to swap the cabbage for chopped broccoli, bell pepper, cauliflower or cauliflower rice instead. You can also make this breakfast with pre-cooked deli meat or even salami that’s lowest in g net carbs that you can find at your local grocery store.
Make It A Reuben – create a keto version of a classic Reuben by adding grated cheese, sauerkraut and Russian dressing to the finished dish.

- Cooked Corned Beef, Chopped
- Cooked Cabbage, Sliced
- 2 Eggs
- Sea Salt & Black Pepper
- Olive Oil, Coconut Oil or Avocado Oil, for frying
- Heat a large skillet or frying pan on the stove top over medium heat to high heat.
- When hot add in your cooking oil of choice, then place the chopped corned beef into the frying pan and cook for 2-3 minutes.
- Add in the sliced cabbage and cook until the meat and cabbage is golden and cooked to your liking.
- Make a couple of spaces for the eggs, then crack them over and cook for 3-4 minutes or until the eggs are perfectly cooked to your liking.
- Serve, topping the low carb corned beef hash recipe with salt, pepper or your seasoning of choice, and enjoy.
