This Keto Coleslaw Recipe makes an easy, creamy low carb side or salad that has only 2 ingredient – cabbage and sour cream.
You can use any budget friendly cabbage you like and either grate or chop from a head of cabbage or buy already shredded cabbage to make an almost instant salad. (For more budget inspiration, here’s my cheap keto grocery list.)
I find sour cream to contain the perfect creamy, sour, tangy flavor that a coleslaw calls out for. Feel free to swap for keto friendly mayo, natural or Greek yogurt instead.
More Low Carb Slaw Ingredients
Here are more ideas for low carb ingredients to include in your slaw:
Lemon – zest or juice can be squeezed over.
Apple Cider Vinegar – drizzle over a teaspoon or more.
Stevia – to balance the sourness with some sweetness.
Garlic or Onion – briefly saute and then toss through your slaw.
Cheese – grated cheese, feta or crumbled goats cheese for a cheesy keto coleslaw.
Nuts or Seeds – toasted almonds, walnuts, pumpkin or sunflower seeds can be sprinkled over the salad for a nutty, crunchy element.
Salt & Pepper – or any other seasoning you like, to taste.
Keto Coleslaw Recipe
- 1/4 to 1/2 Head of Cabbage
- 1/4 to 1/2 Cup Sour Cream
- Chop, peel or grate the cabbage, or use already shredded cabbage, and place it into a salad bowl.
- Drizzle over the sour cream, a little at a time until it’s perfectly creamy.
- You can add in your flavors, additional ingredients or seasoning of choice and toss well to combine.
- Place in the fridge for a few hours to allow the flavors to develop, then serve.
