These keto chocolate truffles make an easy, decadent dessert treat that’s perfect for Christmas, Valentines Day or for all through the year when you’re craving a sweet treat.
The rich chocolate dessert makes a deliciously decadent, melt in the mouth creamy delight that will satisfy your sweet tooth craving.
Keto Truffle Ingredients
These low-carb truffles need only 4 ingredients, and below there are plenty of ideas for flavor inclusions and toppings:
Keto Chocolate – opt for 85% or 90% sugar-free chocolate or dark chocolate chips for the lowest carb and sugar content for your truffles. Lindt is always a luxurious option, but I’ve also made these with my go to ALDI 85% chocolate and they are just as divinely chocolatey, without too much added sugars.
Stevia – you can use your sugar alternatives or sweetener of choice, such as stevia or monk fruit sweetener, in this recipe. Start with less and add more to taste. If you’d like your truffles to be extra dark, then you can always leave out sweetness all together.
Butter – I usually opt for salted butter as it enhances the flavor and richness of the truffles.
Cream – use a high percentage of cream for extra creamy, delicately soft truffles, such as heavy cream, heavy whipping cream or double cream.
Swap the cream for coconut milk or coconut cream, use dairy free butter and chocolate for a chocolate truffle recipe that’s completely dairy free.
More Simple Ingredients Ideas
You can keep the truffles simply chocolate flavored. Or, here are some ingredients you can choose from to flavor your low carb chocolate truffles recipe with.
You can mix the flavoring into the batter before going into the fridge. Go for 1/4 to 1/2 a teaspoon, depending on how strong you’d like the flavor to be:
- Orange, lemon or lime zest
- Sea salt
- Vanilla extract
- Raspberry flavor extract
- Orange extract or lemon extract or essence
- Rose water
You can leave the truffles without rolling or dipping into any further dusting, or you could fill a plate with one of the following options and roll your truffles in them for an extra indulgent layer:
- Grated keto chocolates for added chocolate flavor
- Finely chopped nuts
- Unsweetened cocoa powder or cacao powder
- Shredded coconut
- Melted chocolate coating
Keto Chocolate Truffles Recipe
- 3.5 ounces/100g Keto Chocolate
- 1-2 Tablespoons Stevia
- 1 Tablespoon Butter
- 1/2 Cup Heavy Cream
- Chop or break up the unsweetened chocolate into small pieces and place it into a mixing bowl.
- Add the stevia and butter to the chocolate.
- Pour the cream into a small saucepan and place it on the stove top over medium heat.
- Heat the cream until almost at simmering point, then remove from heat and quickly pour the hot cream over the large bowl with the chopped chocolate.
- Stir quickly so that the heat of the cream gently melts the chocolate and butter.
- Mix until you have a smooth chocolate mixture, then allow the chocolate ganache to cool completely. You can taste the mixture to ensure it’s sweet enough or mix through any flavoring you like, at this point.
- Once at room temperature, move the truffle mixture to the fridge for a few hours to harden.
- After a few hours, remove the bowl from the fridge, remove a teaspoon of the mixture at a time and roll into chocolate truffles.
- You can dip the truffles into grated chocolate, cocoa powder or your dipping of choice, place in a single layer on a plate or baking sheet lined with parchment paper and enjoy.
- Store the homemade truffles in the fridge and enjoy within a few days. (If they last that long!)
