Creamy Cauliflower Mash
I honestly prefer creamy cauliflower mash as a tasty substitute to mashed potatoes.
I find there is just so much more flavour and complexity to a creamy bowl full of cauliflower mash that I would happily enjoy it on it’s own.
Although, this does make an irresistible keto side dish and is perfect topped with a couple of low carb sausages, corned beef or roast lamb.
You can really make this dish as creamy (or extra creamy) as you want, simply by adding more butter, mascarpone, cream cheese or almond milk.
If you do want to just enjoy it by the bowl full, then consider simply topping a portion with a (generous) sprinkling of Parmesan. Simple and delicious!
Creamy Keto Cauliflower Mash Recipe
- 1 Head of Cauliflower
- Salt and pepper to taste
- 2 Tablespoons Butter
- 2 Tablespoons Mascarpone or Cream Cheese
- Almond Milk (or your milk of choice)
- Finely chop the whole head of cauliflower.
- Half fill a large pot with water and bring up to the boil.
- Once boiling, add the chopped caulifower, salt and pepper to taste.
- Simmer until the caulflower is soft and easy to mash.
- Drain and mash your cauliflower.
- Add the butter, mascarpone and any additional salt, pepper or other seasoning to taste.
- Mash until smooth.
- If you’d like your cauliflower mash extra creamy then add a few (or more) tablespoons of almond milk or your milk of choice.
