Creamy Cabbage Salad Recipe
I just adore simple salads with only a few ingredients. Each element brings something to the table – such as creaminess or crunchiness and together creates a salad which you just can’t get enough of.
This salad is loaded with healthy fats thanks to both the sour cream and pine nuts – the perfect keto friendly nut. I’d suggest starting with a half a cup of sour cream and then add more depending on how creamy you want your salad. (And on the size of your half a cabbage!)
You’ll find that a couple of hours in the fridge really help develop the flavours of the salad. The sour cream and apple cider vinegar gets to work tenderising the cabbage a little and it’s worth the wait.
Keto Creamy Cabbage Salad Recipe
- 1/2 Head of Cabbage
- 1/2 Cup Sour Cream
- 1 teaspoon Apple Cider Vinegar
- 1/4 Cup Pine Nuts
- Generous Pinch of Salt
- Shred the cabbage by finely slicing.
- Place into a salad bowl.
- Pour over the sour cream and apple cider vinegar.
- Stir to combine and add more sour cream if you want.
- Top with the pine nuts and a generous pinch of salt.
- Place into the fridge for a few hours for the flavours to develop, serve and enjoy.
