Corned Beef Breakfast Hash
A Corned Beef Breakfast Hash is one of my favourite ways to enjoy leftover corned beef.
If you’re unsure about cooking corned beef from scratch, it’s really simple. All you do is pop it into a large saucepan, cover with water and bring up to the boil.
Then simmer for 30 minutes per 500g or pound and then an extra half an hour or until it’s cooked to your liking. You’re welcome to add in salt, pepper or your seasoning of choice.
Other traditional corned beef inclusions are carrots, onion and garlic. However, my local Irish Butcher has suggested to just cook the corned beef in water as there’s usually tons of flavour in the brining process and nothing else is needed.
I enjoy my corned beef with a side of cauliflower mash and cabbage usually. And then, enjoy leftovers in a corned beef breakfast hash like this.
Corned Beef Breakfast Hash Recipe
- Chopped Cauliflower
- Salt & Pepper, to taste
- Leftover Cooked Corned Beef Silverside
- Eggs
- Butter or Coconut Oil, for frying
- Heat butter or coconut oil in a large frying pan.
- When hot, add the chopped cauliflower.
- Add any salt, pepper or seasoning to taste.
- Cook until softened and browned, adding more butter or coconut oil when needed.
- Add the corned beef and cook until heated through and browned to your liking.
- Crack over 2-3 eggs per person and cook until the eggs are perfectly cooked to your liking.
- Move to a plate and enjoy.
This makes such a hearty breakfast and one you can easily adapt to enjoy with whatever leftover meat you have to have and vegetables you’d enjoy with it.
