Cauliflower Mac and Cheese
You’ll LOVE this creamy and cheesy Keto Mac and Cheese. Best of all it takes just 10 minutes and you’ll have a glorious bowl full of cauliflower mac and cheese.
I’ve specified a quarter of a cup of each sour cream, cream and cheese. You can use more depending on the size of your cauliflower and just how creamy and cheesy you want your mac and cheese to be.
Feel free to mix up your grated cheese, using a variety of cheddar, parmesan and/or your cheese of choice.
Keto Cauliflower Mac and Cheese Recipe
- 1 Head of Cauliflower
- 1/4 Cup Sour Cream
- 1/4 Cup Cream
- 1/4 Cup Grated Cheese
- Butter or Coconut Oil, for frying
- Heat butter or coconut oil in a frying pan.
- Meanwhile, chop the whole head of cauliflower into bite sized pieces.
- When the butter or coconut oil is hot, add the chopped cauliflower.
- Cook, tossing regularly, until softened and golden, adding more butter or coconut oil as needed.
- Once cooked, pour over the sour cream and cream and bring to a bubble.
- Finally, stir through the cheese and allow to melt and thicken slightly.
- Serve and enjoy!
